Two Healthier Ice C-c-c-cold Treats You Could Make Right Now



During the summer’s heat do you find yourself reaching for an ice cream or popsicle –more often than you’d like?

These two treats are wonderfully easy to make, they’ll give your sweet tooth exactly what it demands, AND they’ll nourish your mind, body and soul.


Yay- healthy tastes good!!! Now let's eat...


Creamy Coconut Mango Soft-Serve Ice Cream or Popsicle


In a high-performance countertop blender add 1 cup frozen mango, a dash of cardamom, a squeeze of fresh lime or a teaspoon of pure maple syrup, and ¾ cup of canned coconut milk. Blend until smooth. You may need to scrape the sides once then blend again. Enjoy right away by the spoonful! OR: transfer the mixture to popsicle molds and store in the freezer to enjoy later once fully frozen.


Frozen Banana Bites ala Chocolat


Line a baking sheet with parchment paper. Cut a banana into 1-inch-thick slices and place evenly across the baking sheet. Meanwhile, add ¼ cup dark chocolate chips to a microwave-safe bowl. Heat the chocolate chips at 10-20 second intervals, stirring in between and making sure the chocolate is melting well without seizing. Once chocolate is completely melted and smooth, drizzle over the banana slices. You may garnish the tops with nuts if you wish: walnuts, chopped peanuts, or cashews all work beautifully. If you need to keep things nut-free: sunflower seeds, pepitas, or even hemp hearts would also be delicious! Pop in the freezer and enjoy once frozen.
